White bread loaf
Ingredients
- 500g (bread) flour
- 375g water
- 7g dry yeast
- 5g salt
Method
- Put everything in the stand mixer, mix on medium for ~10 minutes.
- Cover and let rise for 1 - 1 1/2 hours.
- Shape into tight loaf, put in well floured proofing basket, cover and let rise.
- After 40 minutes, turn oven on to 220C and put in cast iron pot with lid to heat up.
- After 20 more minutes the dough should have finished proofing. Carefully place in the hot pot, then put in the oven with the lid on.
- After 20 minutes, take the lid off, reduce the heat to 180 and cook for 20 - 25 more minutes.
- Take loaf out of pot and allow to cool on wire rack for at least 1 hour before cutting.
Options
Replace up to half the flour with wholewheat flour. For every 10g of wholewheat flour used, add an extra 5g of water.
